We make our sauces at the Food Venture Center in Hardwick, Vermont, which is a wonderful resource for small business in the state. They have all the equipment necessary for large scale production, bottling, and packaging. We source as much as we can from Vermont, and especially our maple syrup which we get from Brigham Hill Maple in Colchester, VT. As we work to build relationships with area retailers we are hoping to bring our humble sauce to a store near you.Vermont’s breathtaking landscapes and abundant natural resources make it a truly remarkable place, deserving of both appreciation and conservation. During a serene camping trip near Stowe, VT, I had the opportunity to delve into the wilderness and experiment with foraging techniques. Tapping a birch tree for sap became a revelatory experience as clear droplets of sap water trickled out, which I carefully collected and reduced over my campfire. The resulting elixir, reminiscent of marshmallows and birch beer, served as a testament to the beautiful harmony of nature. Excited by this discovery and inspired by the lingering spices of India from a recent journey, I began an annual tradition of tapping maple and birch trees, igniting a passion for crafting sauces and exploring new flavors.
As winter enveloped us, I found solace and warmth in our kitchen, transforming our homemade syrup into savory sauces and experimenting with new recipes. I envisioned our creations as a continuation of New England’s rich culinary heritage, embracing both traditional favorites like pot roasts and clam chowder and the endless possibilities for innovation as our region evolves with new cultural influences.
