Whitney Lamy, the visionary behind Castleton Crackers, wears many hats – she’s both an artist and a baker. Her curiosity about the origins of our everyday foods sparked a unique perspective that drove her to think beyond conventional boundaries when launching her food enterprise. Drawing inspiration from the early 1800s innovation of Josiah Bent, who revolutionized the staple soldier and seafarer fare, Hardtack, by creating a lighter, thinner version, Whitney adopted his method of rolling out dough sheets and hand “cracking” them. For years, she meticulously crafted crackers in this traditional manner in her Castleton, Vermont kitchen, sharing them with loved ones.
In 2013, VFCC (Vermont Farmstead Cheese Company) embraced Castleton Crackers into its fold, preserving Whitney’s artisanal approach. Her crackers, characterized by their rustic charm and crafted from pure, all-natural ingredients, remain a delightful complement to VFCC’s exquisite cheeses. Notably, one variant, Alehouse Cheddar, ingeniously integrates VFCC cheese, forging a seamless fusion of flavors. Castleton Crackers emerges as a harmonious blend of the finest qualities from both brands, marking a significant milestone as Vermont’s pioneering artisanal cheese and cracker enterprise.
